There was an extreme contrast in temperature as the ship transitioned from winter to summer and vice versa without spring and fall. Extreme heat caused the corn's sugars to caramelize in the wood and work their way into the bourbon as the wood contracted with the excessive fall in temperature.

Without having to compete with the rye's spice, the bourbon of Ocean Voyage 19 took on a great deal of vanilla and salted caramel corn as its dominant flavor with a subtle wood finish. After the end of its voyage, the bourbons are taken back to Kentucky, where they are cut with pure water and finally bottled.
